Save time in the day with a barbecue and marinate in a mixture of garlic, ginger, soy sauce and orange juice the night before.

2 pounds skinned, boned chicken thighs
1 cup red onion, thinly sliced
2 tablespoons minced garlic
2 tablespoons minced peeled ginger
1/4 cup soy sauce
1/4 cup fresh tangerine or orange juice
Freshly ground pepper
Vegetable oil for the grill

Combine chicken, onion, garlic, ginger, soy sauce, lemon juice and 1 teaspoon pepper in a large plastic bag with zipper. Seal and shake to coat chicken with marinade. Refrigerate 1 hour or overnight.

Preheat a grill to medium - high and oil the grill. Grill chicken skin side down until marked, for 5-6 minutes. Flip and cook until cooked through, about 5 minutes. Let stand 5 minutes before serving.
